Happy Monday! Here is a look at what we are having for dinner this week to help inspire your weekly menu.

MONDAY – Sloppy Joes served with sweet potatoes and green beans — To keep things quick and simple I use manwich sauce for my sloppy joes 9 times out of 10. But, I found this recipe for slow cooker sloppy joes that is tasty as well!

TUESDAYSlow Cooker Asian Sesame Chicken served with rice and sautéed veggies (bell peppers, edamame, and spinach)

WEDNESDAYBroccoli Cheddar Chicken Pasta — Lately, I have been adding zucchini and yellow squash into this dish. This time, I am planning on incorporating the zucchini by making zucchini noodles with my spiralizer!

THURSDAYSweet Potato Chili — It is almost getting too warm for chili here, but I had to squeeze in one more chili dinner before the fall. My cousin shared this recipe with me months ago, and it is by far my favorite chili recipe!

FRIDAYAvocado and Black Bean Quesadillas with roasted cauliflower — This is a great meatless meal, but if the members of your family aren’t fans of meatless meals, it is easy to add in your favorite meat: chicken, beef, ground turkey, pork, etc.

A new week calls for a new dinner menu from my home to yours. Hoping this gives you fresh dinner ideas for your week!

MONDAYSausage and Peppers with Zucchini Noodles — I decided to add some cooked whole wheat pasta (about 2 handfuls or so of uncooked pasta) to this recipe, and I was glad I added in some pasta.

TUESDAYSpaghetti Squash Pad Thai — This recipe is one of my favorites! Each time that I make it I am amazed at how delicious it is. Cooking the spaghetti squash the night before turns this into a super quick weeknight dinner!

WEDNESDAY – Frozen pizza served with roasted cauliflower — To roast cauliflower: preheat oven to 450°, place cauliflower on a cookie sheet lined with foil (helps cut down on clean up!), coat cauliflower lightly with olive/avocado/coconut oil and season with salt & pepper, and cook for 25 minutes.

THURSDAY – Trader Joe’s Cilantro Chicken Wantons served with sautéed vegetables (carrot, zucchini, and bell pepper) and rice — If it seems like you have heard about these cilantro chicken wantons before, it is because they have become an absolute staple in our house. This meal is definitely a go-to for us when we need something quick!

FRIDAYPulled Pork served with mac & cheese (our favorite brand is Annie’s!) and green beans — You can serve the pulled pork plain, as sandwiches, over a piece of toast, or in a wrap!

MONDAY – Scrambled Eggs, Bacon, sauteed zucchini and yellow squash, and sweet potatoes. — We love eating breakfast for dinner! It is my go-to when I need something quick, easy, and delicious.

TUESDAYSlow Cooker Asian Turkey Meatballs served with rice and sauteed vegetables

WEDNESDAYMeatball subs served with sweet potatoes and green beans

THURSDAYSlow Cooker Chicken Gyros — This recipe is so simple to make and tastes delicious! Serve this chicken on a pita with toppings like cucumber, red onion, and tomato or on a salad.

FRIDAYRoasted Chicken and Veggies — To help speed up the prep time needed for this recipe, chop the veggies and chicken the night before. With everything chopped, this comes together in a flash. This recipe pairs well with a baked potato, sweet potato, rice, etc.

Happy Summer, everyone! Here is some dinner inspiration for your week!

MONDAYSlow Cooker Hawaiian Chicken served over rice with purple cabbage, shredded carrots, green onion, spinach, cilantro, and avocado. — If you have leftovers, make it into a salad for lunch the next day! The chicken tastes good cold as well!

TUESDAYSpaghetti Squash Pad Thai — We had this recipe for the first time a few weeks ago, and oh my goodness, I still can’t get over how good it was! If you are pushed for time when making dinner, prepare the spaghetti squash the night before and refrigerate it. Prepping the spaghetti squash takes the longest for this recipe…everything else comes together super quickly!

WEDNESDAY – Egg Sandwiches served with sauteed zucchini and yellow squash (or substitute your favorite veggies!). — I like to add tomato and smashed avocado to my egg sandwiches, and this time I am adding bacon. I usually stay away from bacon unless I am at a restaurant because I hate dealing with the grease and mess of prepping bacon, but my cousin told me that he likes to cook bacon in the oven, which cuts down significantly on the clean up!

THURSDAY – Trader Joe’s [frozen] Cilantro Chicken Wantons served over rice and sauteed veggies (red pepper, spinach, edamame, zucchini, etc.) — These have quickly become a staple in our house! You can fry them up in a little oil in a pan or heat them up in the microwave, but either way this is a great option for a quick meal!

FRIDAYHoney Garlic Chicken and Veggie Skewers served with sweet potatoes — This is a great meal for summertime, especially if you have a grill! Instructions on how to cook these in the oven are also included if you don’t have access to a grill (like me :/ ).

Happy Monday! Having a hard time coming up with meal ideas for the week? Take a look at my menu for some inspiration!

MONDAYSlow Cooker Chicken Burrito Bowls

TUESDAY – Falafel rice bowls made with Trader Joe’s frozen falafel, brown rice, sliced cucumber, diced red onion, diced tomato, spinach, and hummus.

WEDNESDAY – Spaghetti served with roasted asparagus — My favorite store-bought spaghetti sauce is Trader Joe’s Tomato Basil Marinara. I also like to mix in about half a can of tomato sauce.

THURSDAYPulled Pork wraps served with steamed broccoli — I am going to try something a little different with my leftover pulled pork by making more of an Asian-inspired wrap. Some of the toppings I am planning on using are shredded purple cabbage, shredded carrot, tomato, edamame, green onion, and soy sauce. I am really excited to see how this turns out!

FRIDAY – Breakfast for dinner — Quiche (spinach, red pepper, and ham) and almond flour pancakes — These pancakes are definitely not the prettiest, but they sure are delicious! The recipe makes a lot of pancakes, but they reheat well for a quick breakfast!
