Menu Monday

This summer is flying by and has been a little crazier than first anticipated. Ryan and I have been in the process of moving for the majority of the summer, hence why my Menu Monday posts have come to a halt. But, I’m back! Ryan and I are beginning the process of getting settled into our new home, and I am even more excited to get back to cooking on a regular basis again.

MONDAY – Spaghetti served with steamed broccoli and garlic bread

TUESDAYOven Chicken Fajitas — Vegetables have been lacking in our diet the last few weeks, so I am looking for any way to add in extra veggies. I am planning on adding zucchini and maybe summer squash to the peppers!

WEDNESDAYEgg Roll Bowls served over rice — This is a new favorite of ours! Full of lots of good veggies, and it comes together so quickly. We like to use ground turkey instead of ground pork, and we add rice to help fill us up a little more.

THURSDAYPulled Pork Sandwiches served with sweet potatoes and slaw — The slaw recipe is a NEW recipe for us this week. I am excited to see how this pairs with the BBQ sandwiches!

FRIDAYSkillet Gnocchi with Sausage and Broccoli Rabe — **NEW recipe for us this week! I am planning on using Trader Joe’s cauliflower gnocchi in this recipe.

Happy Monday! Here is a look at what we are having for dinner this week to help inspire your weekly menu.

MONDAY – Sloppy Joes served with sweet potatoes and green beans — To keep things quick and simple I use manwich sauce for my sloppy joes 9 times out of 10. But, I found this recipe for slow cooker sloppy joes that is tasty as well!

TUESDAYSlow Cooker Asian Sesame Chicken served with rice and sautéed veggies (bell peppers, edamame, and spinach)

WEDNESDAYBroccoli Cheddar Chicken Pasta — Lately, I have been adding zucchini and yellow squash into this dish. This time, I am planning on incorporating the zucchini by making zucchini noodles with my spiralizer!

THURSDAYSweet Potato Chili — It is almost getting too warm for chili here, but I had to squeeze in one more chili dinner before the fall. My cousin shared this recipe with me months ago, and it is by far my favorite chili recipe!

FRIDAYAvocado and Black Bean Quesadillas with roasted cauliflower — This is a great meatless meal, but if the members of your family aren’t fans of meatless meals, it is easy to add in your favorite meat: chicken, beef, ground turkey, pork, etc.

WEDNESDAYSpaghetti Squash Pad Thai — If you are crunched for time when preparing dinner in the evening, cook the spaghetti squash in a crockpot, instant pot, or in the oven the night before! Also, I always add extra veggies (like edamame and broccoli) to this recipe.

FRIDAYPulled Pork served with roasted asparagus and mashed potatoes — Whether you turn this into pulled pork sandwiches or eat the meat as is, it is delicious!

Happy Monday! Lacking inspiration for dinnertime ideas this week? Take some ideas from my menu to help simplify your week!

MONDAY – Spaghetti served with asparagus — My favorite way to prepare asparagus is to roast it in the oven, but frozen works well too if you can’t find fresh asparagus.

TUESDAYSlow Cooker Chicken Burrito Bowls

WEDNESDAY – Falafel Bowls — I am going to combine some cauliflower rice, frozen falafel (from Trader Joe’s), vegetables (radishes, cucumbers, tomatoes, spinach, roasted sweet potatoes, etc.), and tahini sauce to make this dish. This is something new for us this week, and I am really looking forward to seeing how this turns out!

THURSDAY – Chicken wraps served with roasted cauliflower — This is an easy meal to throw together for a busy weeknight dinner! To roast cauliflower, coat cauliflower with a little olive oil and season with sea salt, and pepper (or your favorite seasonings). Bake at 450° for 25 min.

FRIDAYSlow Cooker Asian Sesame Chicken served with rice and sautéed veggies (zucchini, carrot, bell pepper, edamame, etc.)

Happy Monday, everyone! Sorry I have been MIA on here lately. Ryan and I took a trip to Rome over Thanksgiving and are just getting back into the swing of things. Be on the lookout for posts about our trip in the weeks to come! 😉

This time of year is so much fun, but it can also make your schedule seem even fuller than normal. Believe me, I am right there with you! Creating a meal plan for my week decreases my stress level tremendously, so I hope that my meal plan can help relieve YOU of some stress as well. 🙂

MONDAYBroccoli Cheddar Chicken Pasta — This is one of our favorite dinners! I especially love eating leftovers for lunch the next day. Feel free to add extra veggies in addition to the broccoli; that is what we have been doing lately!

TUESDAYCrockpot Sesame Chicken served with rice and sautéed vegetables (zucchini, yellow squash, red pepper, and edamame)

WEDNESDAY – Sloppy Joe’s served with steamed broccoli and sweet potatoes — I love Manwich sauce myself and will probably never be able to give it up completely, but I have found this recipe for homemade sloppy joe’s that is a pretty close second 😉

THURSDAYSlow Cooker Chicken Fajita Soup — I like to make my own cream of chicken soup following this recipe.

FRIDAYSpaghetti Squash Pad Thai — I always add some frozen edamame to this recipe! This recipe is really easy to adapt to your specific taste.

MONDAY – Trader Joe’s Cilantro Chicken Wantons served with cauliflower rice and sautéed veggies — Some of my favorite veggies to make with this meal are edamame, zucchini, yellow squash, red pepper, and spinach.

TUESDAYPotato Soup served with a salad and bread — This recipe is so good and comes together quickly! I like to use diced ham in place of the bacon.

WEDNESDAYMeatball Subs served with steamed broccoli and sweet potatoes — If you are short on time in the evenings, make these in the crockpot! Pour 1/3 of the jar of marinara sauce in the bottom of your crockpot, place desired amount of frozen meatballs on top of the sauce, and pour the rest of the jar of marinara sauce on top. Cook on low for 6-8 hours.

THURSDAYRoasted Chicken and Vegetables served over rice (or pasta) — Time Saving Tip: Taking the time to chop up the vegetables and chicken the night before will help this meal come together even faster! All you have to do is preheat the oven, place chicken, vegetables, and seasoning on your baking sheet, and cook!

Feeling uninspired to come up with dinner ideas for your week? Believe me, I have been there! I hope my menu can give you some inspiration and eliminate some stress from your week.

MONDAYBanh Mi Flatbread served with asparagus — **New recipe for us this week! I am planning on changing this recipe up a bit. I am going to use this recipe for inspiration as well (I am planning on using chicken instead of meatballs and adding radishes). I am also planning on swapping out the mayonnaise for Greek yogurt or avocado. Can’t wait to report back and let you know how this tastes!

TUESDAYSloppy Joes served with green beans and Trader Joe’s frozen mashed sweet potatoes — The last time I made this recipe, I followed the instructions for cooking it in the crockpot, and it turned out great!

TUESDAYHawaiian Shredded Chicken Rice Bowls — We like to top our rice bowls with purple cabbage, cilantro, shredded carrot, green onion, and avocado!

WEDNESDAYRoasted Chicken and Veggies served with sweet potatoes — To help cut down on prep time day of, chop up the veggies and chicken the night before. This recipe is very simple and delicious!
