WEDNESDAY – Spaghetti Squash Pad Thai — If you are crunched for time when preparing dinner in the evening, cook the spaghetti squash in a crockpot, instant pot, or in the oven the night before! Also, I always add extra veggies (like edamame and broccoli) to this recipe.
THURSDAY – Slow Cooker Asian Turkey Meatballs served with rice and sautéed veggies
FRIDAY – Pulled Pork served with roasted asparagus and mashed potatoes — Whether you turn this into pulled pork sandwiches or eat the meat as is, it is delicious!
