Happy Monday! Here is some meal inspiration for your week.
MONDAY – Roasted Chicken and Vegetables served with sweet potatoes — For this recipe, I never use the full amount of pepper it calls for (1/2 tsp). That amount of pepper is too strong for me, so I just use it to taste.
TUESDAY – Slow Cooker Asian Sesame Chicken served with rice, edamame, and red pepper — *NEW recipe for us this week! This recipe calls for only 4 ingredients and sounds perfect for a busy week!
WEDNESDAY – Spaghetti Squash Pad Thai — *NEW recipe for us this week! We love Pad Thai, so I am interested in trying this spin on it with spaghetti squash.
THURSDAY – Chicken wraps served with a salad — I am planning on using some of the leftover chicken from this recipe that I made a few weeks ago and adding our favorite toppings: avocado, tomato, spinach, cheese, and bbq sauce.
FRIDAY – Cilantro Chicken Wantons served with rice and veggies — These frozen wantons from Trader Joe’s are amazing! I have a feeling this is going to become a staple meal for us.
